Organoleptic characteristics

A cured cheese made with raw milk from La Mancha sheep and macerated in wine for 2 months. With a slightly intense flavor, acid and with a red aftertaste. Its texture is compact and smooth as well as buttery. Inside, it has a light ivory color with fine red lines and on the outside its rind is red wine.
