It all started as a cheese conservation method passed down from generation to generation and it certainly is not just a coincidence, that after all those years, it still attracts a lot of adepts! The best way to fully enjoy our cheese is having it with our tasty liquid gold, the extra virgin olive oil to give that special touch to your salads, in some delicious toast bread for dinner and savour that peculiar buttery taste of the raw sheep’s milk.

Organoleptic characteristics:

A cured cheese macerated 5 to 8 month in olive oil, a constant flavour with a soft touch, a penetrating and intense aroma, a compact and cohesive texture and a marvellous golden ivory colour achieved thanks to the oil.

Our cheeses keep on reaping awards in international competitions. The latest to join the awarded list is our cheese marinated with olive oil, which won two stars in the prestigious GREAT TASTE 2022 competition in the United Kingdom.

What the judges highlighted from it:

“We loved it so much that we had to come back for more. The texture was soft and smooth and , no doubt, the olive oil had something to do with that. The flavour was rounded and well-balanced, and lasted in the mouth for a long time. It had that sheep cheese taste but  not much. Altogether, a fabulous example.”

“That cheese has a distinctive texture with the element of olive oil very present , both in appearance and in the sensation in the mouth. The flavours are creamy, slightly acid and a bit spicy. Un marvellous cheese, with a strong identity of its own ”

“Visually stunning, the attractive yellow colour of the cheese and the dark yellow rind. The cheese has a rich and earthy aroma. The cheese is humid, soft with a salty flavour, but it’s not daunting. Both judges thought that the cheese was delicious and a fantastic addition to the cheese board. We have to praise the elaboration process as the cheese has curation of 150 to 240 days and it is handmade”
